Bread Baking Basics
Have you longed to share bread made with your own hands with family and friends, to smell the aroma of freshly baked loaf in your own kitchen? Would you like to refine your baking skills? Or would you simply like to play with dough for a few hours on a weekend afternoon? Join us for a hands-on class in the basics of bread baking.
We'll discuss the ten steps of the process of making bread, and you'll participate in each one, from selecting ingredients, to kneading a dough by hand, to shaping, scoring and baking (and, of course, tasting).
In this three-hour class, your seasoned instructor will show you one basic dough and how it can be made into many delicious products, including baguettes, soft, buttery rolls, fruit and nut loaves, and pizza.

Bread Baking Basics, Part II
The perfect follow-up to our Bread Baking Basics class, Part II delves deeper into the subject of making artisan bread. In this three-hour hands-on class, we will discuss the use of yeasted starters in bread-making and further explore the wonderful art and science of fermentation. We will make a few different breads using different starters, and we will also use different grains, including rye and spelt, to make breads with heartier textures and flavors.
You will have the opportunity to sharpen your shaping skills and learn new scoring patterns. And, as with all of our classes, you'll leave with an abundance of beautiful breads to wow your friends and family.
We recommend this class to those who have taken our Bread Baking Basics class or have some previous bread baking experience. (Please note that class will not cover the subject of sourdough breads.)

Sweet & Decorative Breads
You may be astonished to discover just how much butter goes into the making of a brioche roll, or how many eggs are used in challah. That’s the magic of enriched breads—when properly made, they are rich and decadent yet wonderfully light and delicate.
In this three-hour hands-on class, you will learn the surprisingly simple techniques for producing enticing loaves of brioche and challah from a baking master.
From ingredient selection to baking, you’ll study the science and practice the process, turning out fragrant, golden loaves to bring home and share with family and friends. You will also learn just how versatile brioche and challah dough are, as in you shape them into beautiful braids and knots, and fill them with chocolate and dried fruit.

Biscuits & Scones
So flaky, buttery and tender—is it any wonder how we adore a good biscuit or scone? Although not difficult to make, there are some secrets to producing a toothsome biscuit and a delightful scone.
In this three-hour, hands-on class one of our skilled bakers will teach you the techniques and tricks for making these tea-time treats. You’ll make cream biscuits, fruit scones and vanilla shortbreads, and discover, as the bakers say, your “biscuit hand.” At the end of class, we’ll sit down together to enjoy our freshly baked goodies with a nice cup of coffee or tea and our lovely jams and spreads.
And there will be plenty left over to take home and share!

Seasonal Pies & Galettes
Come join Le Pain Quotidien for a hands-on class in the basics of seasonal pies and galettes (a rustic tart). This three-hour class will be taught by one of our seasoned bakers who will instruct you on two basic doughs and unique seasonal pie recipes to please every palate.
Whether you would like to learn new baking skills or just spend an enjoyable afternoon in the bakery, Seasonal Pies & Galettes is the perfect opportunity to do so. At the end of each class, you will leave the bakery with the fruits of your labor to share with family and friends and new recipes to add to your baking repertoire.

Classic Holiday Breads
The holidays are a time to gather around the table and break (delicious) bread with family and friends. Le Pain Quotidien would like to invite you to learn how to bake this delicious bread in a three hour, hands-on class led by one of our skilled bakers in the art of classic holiday breads - Stollen, Babka and Challah. In Holiday Breads you will learn the versatility of each of these doughs and the surprisingly simple techniques you can use at home to produce decadent loaves for your loved ones.
At the end of each class, you will leave the bakery laden with loaves of buttery Stollen, spiced Babka and fruity Challah and new recipes to add to your repertoire.

- At least two weeks withdrawal notice required for full refund.
- Class credit for notice given 4-13 days before scheduled class date (student can attend class at a later date, when there is space available).
- No refund or credit for notice given 72 hours or less before scheduled class date.
- We reserve the right to cancel a class (for low enrollment, bad weather, etc.) with advance notification and we will provide a refund.
