Baked Eggs

Ingredients:

(Serves 6)

  • 1/4 cup Olive oil 
  • 1 red onion halved & sliced
  • Sea Salt to taste
  • 1 tsp smoked paprika
  • 1 small bunch lacinato kale, chopped
  • 1 28oz can diced organic tomato
  • 12 eggs
  • Cracked pepper
 

We love our breakfast staples, but we also love adding new dishes to our brunch routines. Baked Eggs have become our latest go-to - and since they're as delicious as they are easy to whip up, they're great for entertaining large groups! Whether you're hosting family and friends this Mother's Day, or looking for a recipe to savor on a lazy weekend morning, we've got just the thing.

Serve with slices of our crusty baguette or our hearty whole wheat sourdough.

Instructions:

  1. Preheat the oven to 400°F.
  2. Add olive oil to a dutch oven or large cast iron skillet and bring to medium heat, adding onions and salt once hot.
  3. Sauté onions over medium heat until translucent. Add smoked paprika and tomato and cook for an additional 5 minutes, stirring frequently.
  4. Stir in chopped kale and cook for 3-4 minutes until tender.
  5. Crack eggs into pan and place into the preheated oven for 7-9 minutes, or until the eggs are cooked to your liking.
  6. Finish with cracked pepper or a dusting of smoked paprika.
