Crunola Energy Bites:
Weekends are wonderful in so many ways, but they’re especially sweet when there’s time to have a little fun in the kitchen. We were inspired by Allison Walton of the blog & be well, who spent a recent weekend finding delicious ways to eat our Crunola® raw granola.
Made with raw buckwheat groats, bananas, flax seeds, sunflower seeds, Thompson raisins, almonds, Austrian pumpkin seeds and goji berries, our Crunola® is raw, vegan and gluten-free. So go ahead and indulge guilt-free!

Almond Butter, Banana & Crunola Sandwich

I have recently been so in love with my morning pot of organic green tea, paired with the Cranberry & Banana Crunola Parfait that I was inspired to scoop up a bag at LPQ East 77th so that I could experiment on my own.
On a recent weekend getaway in the Catskills with my Crunola in tow, I whipped up Almond Butter, Banana & Crunola sandwiches. They were both cheerful looking and satisfying!
To make them, simply spread the almond butter on both pieces of bread (toast them first, if you like) and then place the banana on one of the slices. Next, sprinkle the other slice of bread with Crunola and hemp seeds to your liking. Drizzle honey for an additional touch of sweetness and enjoy.
Try these as a filling afternoon snack or bring them with you on a hike or picnic!
Going through my pantry, I discovered that it was full of extra ingredients needing to be used. Inspired by my recent trip to Costa Rica, I pulled together what I could find and made my own version of energy bites, using an assortment of super foods.
In Costa Rica, there was an abundance of local and organic shops that sold various flavors of these “energy bites,” all of which were both convenient and satisfying as a pick-me-up during my yoga teacher training. We began to hand select ingredients so that we could make our own and even held a hands-on class during our training which was a huge hit. These are sure to please any palate and are perfect for both children and adults, especially those with allergies, as they can be easily adapted to suit any dietary restriction.
Mix all dry ingredients together in a large bowl and then stir in the honey until it forms a consistency that can be rolled into small bite-sized balls. You can either roll them by hand or use an ice cream or squeeze scoop if you want to avoid sticky hands. Store the bites in a cool place to set and enjoy along with your morning smoothie or as a quick snack on the go!
