Golden Turmeric Chia Pudding

8 tbsp chia seeds

3 1/3 cups coconut milk

2 tsp turmeric

4 pineapple slices

4 tbsp shaved dark chocolate 

4 quinoa cakes, crumbled

We love this for breakfast, but think it would make an amazing dessert too!

Instructions:

  1. In a bowl, mix the coconut milk, chia seeds and turmeric for two minutes.
  2. Pour the mixture into 4 bowls. Put them in the refrigerator for 3 hours, or as long as it takes to gel.
  3. Once ready, remove the bowls from the refrigerator and top with the pineapple slices and quinoa cakes. Sprinkle with shaved chocolate and serve.
