Hummus & Shaved Vegetable Tartine



(Serves 4)

For the hummus:

  • 1 2/3 cups canned chickpeas, drained (reserve the liquid)
  • 2 tbsp tahini
  • Juice of 1/4 lemon
  • 1 tbsp extra virgin olive oil
  • 1 pinch of sea salt

To serve:

  • 4 slices LPQ Whole Wheat Bread
  • 1 cup hummus
  • 1 carrot, fennel bulb and golden beet, shaved
  • 4 tbsp golden raisins
  • 1/2 cup walnuts
  • 2 tbsp harissa oil
  • 1/2 cup parsley leaves
  • Juice of 1 lemon
  • Sea salt & Pepper

Serve up a healthy boost of energy with this bright Hummus & Shaved Vegetable Tartine! Enjoy the taste of homemade hummus combined with flavorful and crunchy vegetables and walnuts.

We love this tartine because it's so vibrant and incredibly easy to make. Try it for a light meal or serve it at your next dinner party for an impressive first course.

For perfectly shaved vegetables, we suggest using a mandoline. For the harissa oil, you can actually use a jar of harissa paste, and pour a bit of the extra oil. It's ok if you get a little of the paste in the mix; it will only add to the flavor!


  1. Put all of the hummus ingredients into a food processor and blend until smooth.
  2. If necessary, use a little of the reserved chickpea liquid to thin the mixture.
  3. To serve, spread the hummus evenly across the bread slices.
  4. In a mixing bowl, combine the shaved vegetables, parsley, walnuts, harissa oil, golden raisins, lemon juice, salt and pepper.
  5. Toss the mixture thoroughly and place on the tartine in one even layer.
  6. Slice the tartine into triangles.
