Mixed Berry Lattice Pie



(Makes one 8" pie)

  • Double Pie crust 
  • 1/2 cup sugar, plus more for topping
  • 1 tsp lemon zest
  • 2 tsp orange zest
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 3/4 tbsp cornstarch
  • 1.5 heaping cups of mixed berries
  • 1 Egg + a pinch of salt for egg wash

Curious what it would be like to roll up your sleeves and bake with the cast of your favorite Broadway musical? Well, we did just that last week when we hosted Molly Hager, Stephanie Torns and Ryan Vasquez of WAITRESS, the new Broadway musical, for a special baking class at our Bleecker Street Bakery!

Inspired by the play's "A Little Wild, Wild Berry Pie", we baked up a mixed berry lattice pie - and now we're sharing our recipe with you!


1. Prepare a double batch of this all-butter pie dough.

2. Preheat the oven to 350°F.

3. Mix together the sugar, salt, zest and cornstarch in a large bowl, whisking together to remove any lumps.

4. Stir in the fruit until all the cornstarch is absorbed.

5. Allow the fruit to macerate for at least 4 minutes (or up to 4 hours).

6. Place the filling into a prepared pie crust.

7. Roll out the second portion of pie dough to 1/8″ and use a fluted pastry wheel to cut 1″ wide lattice strips.  Lay the strips across the pie in a lattice pattern. If this is new to you, find detailed instructions here!

8. Brush the crust with egg wash and sprinkle with sugar.

9. Bake at 350°F for 25 minutes or until the crust is golden brown. Depending on your oven, this could be anywhere from 25 minutes to 40 minutes.
