One-Minute Carrot Salad



(Serves 4 as a side dish or appetizer)


Savoring the fresh flavor and texture of vegetables is often easiest to do when there is minimal preparation involved. Following this philosophy, this simple salad intensifies the delightful sweetness and crunch of the carrot. It also has the added benefit of being raw, which means all of the nutrients and enzymes of this root vegetable are preserved. 

As the name of this salad suggests, it is incredibly easy to make and can be prepared in a flash. We suggest leaving it until the last minute for the freshest flavor.


  1. Place the carrots in a salad bowl and mix with the oil, lemon juice and salt.
  2. Mix gently, season with a little freshly ground black pepper to taste and serve immediately.
