Coconut, Walnut & Cocoa Overnight Steel-Cut Oatmeal



(serves 4)

  • 4 Mason Jars
  • 1 tsp butter
  • 1 cup Organic Steel-Cut Oats
  • 2 cups water
  • pinch of sea salt
  • 4 tbsp raw cacao powder
  • 4 tbsp chopped walnuts
  • 2 tbsp cacao nibs
  • 2 tbsp organic honey
  • 1 cup coconut milk

Do you wake up craving perfectly creamy steel-cut oats? We do! Steel-cut oats make a wonderfully hearty breakfast, but since they take longer to prepare than rolled oats, they don't always fit into a busy morning routine. The solution? Overnight oatmeal!

Preparing your oatmeal the night before will reduce your prep time in the morning to almost nothing. The only decision you'll be left with is the best one of all ... which toppings to mix in. By packaging it in a mason jar, you can easily make this a healthy breakfast on the go. Just remember to pack a spoon!


1. The night before you plan to eat your oatmeal, heat 1 tsp of butter in a saucepan over medium heat. Add the oats and toast them for about 2 minutes.

2. Pour in the water and a pinch of salt and stir. Cover and bring the water to a boil. Once it reaches a rolling boil, turn off the heat and let the saucepan sit covered overnight.

3. The next morning, divide oats evenly into mason jars and add the coconut milk and mix-ins: chopped walnuts, cacao powder, honey and cacao nibs. Or, get creative! Add fresh fruits like pomegranate or banana slices or top with a fruit and nut mix like our Caravan Mix for a nice crunch.

This oatmeal tastes great cold or room temperature. But if you prefer your oatmeal warm, simply add the coconut milk to the saucepan and reheat for a few moments before packaging it.
