Speculoos Tiramisu



(Serves 6 - 8)

  • 4 eggs, separated
  • 3/4 cup sugar
  • 1 lb 2 oz (500 g) mascarpone cheese
  • 4 warm ristretto espresso coffees, or 1 tbsp instant coffee dissolved in scant 1/2 cup hot water
  • 2-3 tbsp Marsala or Amaretto
  • 8 oz Lotus speculoos cookies
    s (or ginger cookies)
  • 6 tbsp unsweetened cocoa powder 



​Valentine's Day is a night to indulge in something sweet. Our choice? Speculoos tiramisu. Spiced with cinnamon, nutmeg and ginger, thin and crunchy speculoos cookies bring a warm, spicy twist to this classic Italian dessert. And, it's easy to make in individual portions - perfect for a night of intimate gatherings.

Ready to dig in? Grab your LPQ bowls and fill them with decadent tiramisu! 


In a small bowl, whisk the egg yolks and sugar until pale and creamy. Place the mascarpone in a large bowl and use a fork or whisk to fluff it up, then pour in the egg yolk mixture and mix until well combined. In a separate bowl, whisk the egg whites to form stiff peaks, then gently fold into the mascarpone mixture.

Place the coffee and Marsala in a shallow dish. Take 6 serving dishes (now’s the time to whip out those empty chocolate spread jars, or any dish that holds about 1 cup/ 8 fl oz/ 250 ml). Dip a cookie into the warm coffee mixture, and start lining each dish with a single layer of cookies. The cookies should stay crunchy!

Spread a 1 inch (2.5 cm) layer of mascarpone cream over the cookies. Place a second layer of soaked cookies on top, then spread over another layer of cream. Repeat this twice more.

Finally, sprinkle each tiramisu with a layer of cocoa powder using a fine sifter or sieve. Refrigerate for at least 4 hours before serving your valentine!
