Toasted Avocado Tartine



(Serves 2)

  • 2 slices of Le Pain Quotidien Whole Wheat Bread
  • 2 ripe avocados
  • 2 tsp Citrus Cumin Salt

Side Salad:

  • 2 handfuls of chopped kale
  • 1 small golden beet, shaved
  • 1/2 small fennel bulb, shaved
  • 1 small carrot, shaved in ribbons
  • Lemon juice
  • Sea salt & black pepper

For the Citrus Cumin Salt:

  • Sea Salt
  • Lemon zest
  • Cumin
  • Red Pepper Flakes

This simple and satisfying tartine combines the rich, creamy flavor of avocado with a burst of seasoning using Citrus Cumin Salt, made with our own sea salt from our pantry. Find the recipe here!

Try this for a light lunch with the side salad or simply whip up the toast on its own for a nourishing afternoon snack.


  1. Toast the slices of whole wheat bread, meanwhile prepare the Citrus Cumin Salt. Find the recipe for the salt here.
  2. Slice each avocado in half, reserving 1/2 of one avocado for slices. Scoop the rest into a bowl and mash gently with a fork. Season to taste with sea salt, black pepper and lemon juice.
  3. Spread the avocado mash across the toasted bread, and sprinkle with Citrus Cumin Salt. Cut each tartine into triangles and top with avocado slices.
  4. For the side salad, mix the chopped kale, shaved golden beet and carrot ribbons. Season to taste with fresh lemon juice, salt and pepper and toss.
