Winter Vegetable Salad



(Serves 2)

  • 5 oz seasonal greens
  • 1 small fennel bulb, thinly shaved with a mandoline
  • 1 medium beet, peeled & thinly sliced with a mandoline
  • 1 medium carrot, peeled & shaved into ribbons

For a fresh twist on the traditional winter vegetable staples, try them raw and paired with a bright citrus dressing. This delicious winter vegetable salad combines the earthiness of beets, with the sweetness of carrots and the crisp, anise flavor of fennel. Perfectly light yet still filling, this salad will make you feel like spring is on the way!


Rinse the carrot, beet and fennel bulb well and pat dry. Begin by peeling the outermost layer of the carrot and the beet, then use the peeler to make long ribbons with the carrot. Prepare the fennel and beet with a mandoline, adjusting the thickness for slightly thicker fennel shavings.

Winter Vegetable Salad

Mix all of the prepared vegetables with the salad greens in a large bowl. Whisk together the lemon vinaigrette ingredients and drizzle over the salad. Et voilà!
